Do you hand sharpen or use electrical sharpeners?

If by hand, do you use stones or diamond sharpeners?

Do you strop or just stop?

How often do you sharpen your knives?

I'm with you, Once I found the Worksharp I have quit using all the others!
I like a really sharp knife, so if I use mine hard Ill resharpen before I put them away! DR

I use stones for my working knives. A set of crock sticks for the kitchen knives.

The only other thing I do is use a ceramic honing rod between sharpenings. A few wipes over the rod every now and then saves time on the Work Sharp.

I have a medium grit and an ultrafine honing stone I use while on break at work. I've gotten pretty good at using them. The Opinel folder cut right through the paper, blotter, and surface of my desk at work while cutting a coupon out.

I really need to work on the kitchen knives.
